HAPONI CHATHA MA Beef stuffed cabbage Growing up along the divide between Little River and Eagle Creek at a place called Ludlow, Oklahoma, can give one a cons...iderable amount of knowledge in a lot of different things. Cooking good food from whatever you have available is just one of them. While My Mother, Rettea was not a Choctaw, she was married to a Choctaw Man, and together they successfully raised ten little Indians. All ten are still alive and kicking, so I can say We were never undernourished. That woman could cook! She not only cooked for the family, but she also cooked for the Burkhart School district, then for The Octavia Head start program. She taught Me a lot of things. She could work wonders with the cabbage that grew so abundantly in in the gardens in the area. In fact, we grew so much cabbage that one of My Uncle Lee Roy’s favorite fiddle tunes was called Boil them Cabbage Down. But you can do so much more with cabbage than boil it. For example, my mother fixed a beef stuffed Cabbage Roll was to die for. I never got Her recipe (like she ever had one,) but have been attempting to duplicate it in recent times. While she had her ways, and means of doing things, I have mine. This Wednesday October 25, 2017 I’ll be serving My rendition of Beef Stuffed Cabbage at The Choctaw Community Center Senior Nutrition Lunch in Durant Oklahoma. District 9. See more
