Be sure and get your watermelon at Saturday’s farmers market!! WATERMELON TEA INGREDIENTS... Simple Syrup * 1 cup Sugar * 1 cup water Tea * 2 quarts boiling water * 12-13 cups fresh cut seedless watermelon chunks (about 1 personal size melon) * 7 individual tea bags DIRECTIONS For the Simple Syrup * Combine sugar and water in a small sauce pan. Stir over medium heat until sugar has completely dissolved, roughly 5-7 minutes. Remove from heat and set aside.1 For the Tea * Place chunks of watermelon in a food processor or blender and puree. Using a strainer over a large bowl, strain the watermelon puree to capture the juice. You should end up with about 6 cups of juice. 1 * Place tea bags in a large pitcher and pour the boiling water over. Allow to steep for 10 minutes. Add the watermelon juice and stir to combine. Slowly add the simple syrup, tasting as you go. Sweeten to your desired taste.

WATERMELON- CUCUMBER SALAD * 3 cups watermelon cubed or balled * 1 1/2 cups sliced cucumber seeds removed * 2 tablespoons mint thinly sliced or small mint leaves... * 1/3 cup feta cheese crumbled * 3 tablespoons olive oil * 1 tablespoon lime juice * salt and pepper to taste * - or a store bought dressing like a vinaigrette or a balsamic dressing. I like raspberry walnut vinaigrette. INSTRUCTIONS * Place the watermelon, cucumber and mint in a large bowl. * In a small bowl, whisk together the olive oil, lime juice and salt and pepper. * Drizzle the dressing over the melon mixture and toss to coat. Sprinkle with feta and serve.
